IT’S FAT THURSDAY!

Pączki - pronounced “pownch-key”

If you live near a Polish Market, you know today is Paczki Day aka Fat Thursday - not to be confused with Fat Tuesday - although in the midwest some consider Fat Tuesday to be Paczki day. What’s it all about? Sometimes known as Polish donuts - They are large and stuffed with a variety of sweets from raspberries to bavarian cream. Paczki are a sugary pastries that date back to the middle ages when the King of Poland brought in French Chefs - to use up the eggs, lard and sugar before the beginning of Lent, the 40 day period before Easter on the Christian Calendar. After a bite - you will never call one a donut again -

Everyday Hero - Dr. Jim O’Connell.

I first learned about Dr. Jim while making Homeless Care Kits for the unhoused and Sponsoring Coats from The Empowerment Plan for The Pine Street Inn in Boston. We sent copies of Dr. Jim’s Book Stories from The Shadows to individuals who sponsored a coat and provided copies of his book to our local library to lend.
